You can use any herb depending on what is growing in your garden or what herbs you like or use the most! Fantastic slathered on corn or atop a steak or roasted potatoes. Compound or herb butter is also just perfect on a slice of French baguette. It truly is a beautiful herb butter. It's a fun project for sure, as there are NO limits to the herbs or herb combinations that you can choose to use! I am including a template for you -- as a way to have a recipe -- but with the ability to substitute whatever herbs you have on hand, or see at the farmers' markets!
This is an EASY project and can be made in varying shapes and sizes. I tend to be too busy to get too artsy with my butters.. I just make into a cylinder and am happy with that, but some folks make the butter into different shapes and that's also delightful!

Ingredients
- 1 stick unsalted butter ½ cup
- 1 ½ teaspoon lemon juice
- 1 clove garlic minced
- 3 tablespoon fresh parsley
- 2 tablespoon total of fresh basil chives, cilantro, dill, mints, oregano, thyme, sage
- ½ teaspoon sea salt
- ¼ teaspoon black pepper freshly ground
Instructions

Mash the butter until creamy in a medium bowl.

Add the other ingredients as listed above, mixing well each time.

Wrap in plastic or wax paper to form a log, place in a small bowl or keep it

in a glass jar with a good lid.
Recipe Notes
Note: Omit the garlic for a more concentrated focus on other herby flavours.
It's delicious both ways -- Experiment!
Beautiful Herb Butter--- Calendula
This recipe is a little more concentrated with a higher ratio of herbs to butter.
It will work with any herbs. It's a simple recipe. It's delicious too!
Try chamomile, chives, dill, lemon balm, even roses!
•½ cup calendula petals, preferably fresh
• ½ cup butter, softened
1. Process butter and petals in food processor until uniform
2. Wrap in plastic or wax paper to form a log, place in a small bowl or keep it
in a glass jar with a good lid.
3. Place in the refrigerator to solidify
Herb butters can remain fresh in the fridge for up to 2 months (without fresh garlic), and up to about 6 months in the freezer. Butter made with fresh garlic will only last about 5-6 days in the fridge, but it freezes well.
Note: For a quick, 'in a pinch' herb butter, just chop the flowers and blend with the butter in a bowl.
Smoked 'n Spicy Beautiful Herb Butter:
- 1 sticks unsalted butter, (½ cup) room temperature
- 1 tablespoon smoked paprika (regular or 'hot' Spanish)
- 1 jalapeño pepper, pulp and also seeds removed, very finely diced
- Pinch of sea salt
Mash the butter until creamy and add the paprika and jalapeño pepper and combine well.
Don't forget the salt!
