Roasted veggies offer us the best version, often, of themselves! Roasting seems to encourage a deep nourishing aromatic sweetness! Roasted Sweet potatoes with herbs is a real hit in my home! There are many variations and each is as good as the next!! The sweet taters, roasted, can be enjoyed just like that, or mashed or made into a warming soup! They are one of my favourite vegetables + I love to experiment with these high fibre tubers. Today I prepared roasted sweet potatoes with rosemary + thyme from my garden. I am so pleased with the results. It's truly a very basic recipe but I will share what I did, and of course, the herbs and/or herb blends are unlimited .. so many combinations! So why is it a great idea to use sweet potatoes with herbs in our meals?
The sweet potato (Ipomoea batatas) is an underground tuber. Sweet potatoes are nutritious, high in fiber, very filling, and delicious. Sweet potatoes are usually orange but also found in other colors, such as white, red, pink, violet, yellow, and purple.
Sweet potatoes are only distantly related to regular potatoes.
The nutrition facts for 3.5 ounces (100 grams) of raw sweet potatoes are (5Trusted Source):
- Calories: 86
- Water: 77%
- Protein: 1.6 grams
- Carbs: 20.1 grams
- Sugar: 4.2 grams
- Fiber: 3 grams
- Fat: 0.1 grams
Starches are often split into three categories based on how well they’re digested. The starch proportions in sweet potatoes are as follows , 9Trusted Source, 10Trusted Source, 11Trusted Source):
- Rapidly digested starch (80%). This starch is quickly broken down and absorbed, increasing the GI value.
- Slowly digested starch (9%). This type breaks down more slowly and causes a smaller rise in blood sugar levels.
- Resistant starch (11%). This one escapes digestion and acts like fiber, feeding your friendly gut bacteria. The amount of resistant starch may increase slightly by cooling the sweet potatoes after cooking.
Fiber
Cooked sweet potatoes are relatively high in fiber, with a medium-sized sweet potato containing 3.8 grams.
Sweet Potatoes with Herbs ~
Sweet Potatoes with Herbs ~
Ingredients
- 2-3 sweet potatoes
- 1-2 tablespoon avocado oil or coconut oil, olive oil
- 2-3 tablespoon fresh Rosemary finely chopped, divided
- 1-2 teaspoon fresh Thyme chopped
- Sea Salt + freshly ground Black Pepper to taste.
Instructions

Peel the sweet potatoes + slice or dice

Place the sliced/chopped sweet potatoes into a plastic bag or zip lock bag

Add the oil

Holding the bag closed, shake up the bag to coat the sweet potatoes in the oil

Slide the taters out of the bag onto a parchment lined baking sheet

Sprinkle with most of the finely chopped rosemary (or herb of your choice)

(save a little for garnish, just prior to serving)

Lightly season with S + P

Place the baking sheet in the oven and roast for about 10 minutes.

Use tongs to flip the sweet potatoes + back into the oven.

Test for 'done-ness'.

Note: I find that if I make a ½ inch or 1 inch dice, or slice fairly thinly, cooking at this high time does allow for
some crispness.. some 'crispy bits' !
