Here is another delightful recipe in my series about how to take advantage of some of the garden's abundance. Mediterranean herb paste, made from several different herb contributors, offers a time-saving idea to elevate your meals. My dear friend and cookbook author, Pat Crocker uses this as a basis for soups, dips, spreads or a memorable vinaigrette brimming with flavour!
I've made this with these ingredients and also have made substitutions depending upon what my garden has to offer. I've used basil, oregano, lemon balm, mints, cilantro ~ even wild garlic, garlic mustard greens, dandelion greens and plantain leaves.
I tend to keep the amounts the same, however, so that the end result is indeed an herb paste. If you are a community member here at Studio Botanica, you may recall other green paste ideas. Check out this post all about herb pastes.

Try this Mediterranean Herb Paste!
Mediterranean Herb Paste
Ingredients
- 10 garlic cloves
- ½ cup fresh sage leaves chopped
- ½- cup fresh thyme leaves
- ¼ cup fresh rosemary leaves snipped
- 2 tablespoon Dijon mustard
- 1 tablespoon sea salt
- 1 tablespoon tarragon or white wine vinegar
- ¼- cup olive oil
Instructions

Pulse garlic in food processor three or four times or until garlic is finely chopped, or pound in a mortar and pestle.

Add sage, thyme and rosemary.

Pulse three or four times (or pound until mixed in) until finely chopped.

Add mustard and salt, pulse until blended.

Gradually add three tablespoons of oil, processing as blended. Add vinegar and remaining olive oil and process until well blended.

Store in the fridge in a glass jar with good lid + enjoy within a couple of weeks.
Recipe Notes
Mediterranean Herb Paste freezes well. I often make this with an *herbal infused vinegar just for an extra boost of flavour + nutrition.

So ~ ideally you have grown these herbs in your garden, or can still find at the local farmers' market. If the only option is to purchase from your grocery, buy fresh herbs by the bunch if possible, use some fresh and gently dry the rest! Not sure what to do with bunches of herbs?
