Here's to a HEALTHY + HAPPY Summer! If you have been a part of the Studio Botanica community for a while, you'll know that my passion for herbs is limitless + I have developed some healthy 'addictions' over time. This year is my 2nd year growing a big pot of lemon herbs. As my tiny herb garden is just that..TINY.. I have needed to truly pick + choose what I want to grow this year.. as my list of "must grow" herbs is getting longer + available sunny area, getting smaller! It's time for some of my most favourite herbal projects. Oh yes.. back to healthy addictions ~ I LOVE to infuse herbs in apple cider vinegar (ACV) and come up with tasty, life-enhancing combinations! In this case, I am making delightful lemon-infused vinegar!
More of a guideline here, but so easy, this is all you need:
Lemon-infused Vinegar is EASY!
You really just need ONE of these herbs and maybe some organic lemon peel, but if you have more than one of these lemony herbs, mix n' match and see what happens!
Lemon-infused Vinegar
Ingredients
- Lemon Balm
- Lemon Basil
- Lemon Verbena
- Lemon Thyme
- Lemongrass
- Lemon Peel
Instructions

Start with a clean bottle or jar.

Add fresh herbs and lemon peel if using

I use a chopstick or a bamboo/wooden skewer to poke at the herbs to settle down into the jar.

Add the vinegar to ½ inch below the top of the container.

Use the chopstick or skewer to poke at the herbs to ensure that they are completely submerged.
Recipe Notes
It is actually ready at this point but the infusion will be more flavourful if allowed to sit for 4-6 weeks. NOTE: 1. If the vinegar is topped up after each use, to ensure that the botanicals are not exposed to air, the vinegar will keep for up to 6 months 2. Strain the herbs out + decant the infused vinegar into a clean jar or bottle. This vinegar should last for at least a year. Makes great gifts in a festive bottle!
How to use Lemon-infused Vinegar:
1. Makes a fabulous vinaigrette with good quality olive oil
2. Excellent as a flavour enhancer sprinkled over roasted, baked, bbq'd or steamed vegggies!
HERB TIP:
A spoonful of herb-infused vinegar on your broccoli or kale or dandelion greens increases the calcium you get by one-third.
3. Use as a marinade for fish or chicken dishes. Adds a bright flavour as an ingredient in marinades or wet 'rubs'
4. Add to sauces, stews, stir-fries ~ any place you'd like a little hit of citrus!
