Lavender (lavandula angustifolia)
is without a doubt, one of my most favourite herbs. If you've ever had the good fortune to find yourself in Provence in early summer, it is perhaps, one of yours too. One simply must fall in love with the overwhelming beauty of rolling fields of light mauve to deep purple blossoms emitting an intoxicating aroma and nourishing countless bees, happily pollinating ~ their bzzzzz offering another level of peace in this, most tranquil setting.
In herbal medicine, the uses of 'lavender herb' (the top ⅓ of the plant; leaves & blossoms), provides many healing constituents which are invaluable in herbal pharmacy. For years, a baking neighbour, made me enchanted Lavender biscotti for my customers at Studio Botanica in Toronto.**
This summer, I've become somewhat addicted to this:
Refreshing Lavender Lemonade
Ingredients
- ¼ cup dried Lavender flowers
- 2 cups boiling water
- ¾ cup honey
- 4 lemons
- cold water
Supplies
- 1 litre Mason jar with lid
- Citrus Juicer
- Spoon for stirring
- 1 litre pitcher
- Sharp knife
- Cutting board
- Strainer
Instructions

Place the lavender flowers into the 1 litre Mason(canning) jar.

Cover with the boiling water. Place lid on the jar.

Let the Lavender flowers steep for 10 minutes and then strain.

Cut the lemons in half and either squeeze by hand or use the citrus juice extractor, adding resulting juice into the pitcher.

Add the lavender flower tea and the honey. Stir.

Add the cold water at this point and stir again.

Serve with ice cubes, if you like and garnish with lemon slices.
