Lavender must be one of my all time personal favourite herbs. My friends, clients and blog friends know that I seem to have quite a few "favourite herbs" as it's really just like that.. There are so many. Too many to count. Lavender is near the top of my list though. How do we enjoy lavender in ways that help us? I mean to say ..besides the obvious beauty of the plant 'herself' and the fragrance she shares? Lavender Honey is a favourite summer project. It's easy to make and so delicious!
Lavender is what we call "amphoteric". A bit like magic, really, lavender can cheer us up and elevate us and also can calm us down and relax us. Lavender helps our digestion to improve and well.. here's a post about lavender and WHY we want to enjoy it's blessings as often as possible. In the meantime, here's an easy 'lavender project' for you. I make infused honey all year round. Check out these notes about infused honey here. and garlic honey here. HOW TO MAKE YOUR OWN LAVENDER INFUSED HONEY
1 jar of local honey
1 tablespoon dried lavender
Spoon the honey into a small pot and add the lavender.
Heat gently. Be careful not to boil. Simmer the mixture for 20 minutes.
Remove from the heat.
Pour into a jar and close the lid. I use glass canning jars. They are available in different sizes and have good lids.
Place in a cool dark cupboard for a week to let the lavender's aroma infuse into the honey.
Gently reheat the honey so it is as liquid as possible to strain out the lavender pieces.
Alternatively, leave the lavender in the jar.
Just ensure to add more honey so the botanicals are covered.
Pour it into another clean jar with a good fitting lid. Add the lid.
This lavender honey is delightful. We use it to sweeten tea and summer beverages, iced drinks and in every day meals. Personally, I love to drizzle it over baked chicken ~ just a little!
Note: Your lavender honey will soothe burns and scrapes.
Bonus: It also makes a great facial!!
