Life is busy and there are times we really want a quick tasty soup, ideal for cold weather days, although I have made this soup, all year 'round. Seriously one of my favourite EASY to make soups.. whether it's on the stove or in the Instant Pot.. the flavours work together! I added "Garam Masala" to this latest version but it's also fine without. Instant Pot Carrot + Ginger soup with a twist may become your own family's fave!

Carrots are a great source of Vitamins B and C but also they are:
- an excellent source Vitamin A
- a good source potassium
- a source of copper, folic acid, thiamine, magnesium; vitamin B6

Carrot + Ginger Soup with a Twist Instant Pot Update!
Years ago, I published this recipe and have made it countless times. Last year, with my Instant Pot, I finally re-wrote it and took a picture to share. Such classic tastes. I added garam masala to the original soup. Hope you enjoy it! It works well, also, with winter squashes.. butternut etc.
Carrot + Ginger Soup with a Twist ~ Instant Pot Update!
Ingredients
- 1 onion medium, chopped
- 2 cloves garlic peeled and chopped
- 3 inches fresh ginger grated (or minced),
- 4-5 carrots organic when possible
- 4 cups chicken or veggie broth or your own home-made broth/stock**
- ½ cup orange juice
- 2 teaspoon garam masala
- Sea Salt + Black pepper freshly ground
- Garnish-- fresh herbs dollop of creme fraiche, drizzle herbal oil, herb paste or your choice
Instructions

Place the onions, 1 clove garlic, ginger, broth, carrots, orange juice and garam masala, as well as salt and pepper in the Instant Pot.

Cook on "manual" for 10 minutes.

Take care. Use quick release. (I use a wooden spoon to move the release button)

Use an immersion blender to process until smooth. (or ladle into a blender to process)

Add remaining clove garlic, finely minced. Stir into the blended soup.

Taste. Adjust seasoning. Light garam masala flavour pairs well with the carrot/ginger/garlic
Recipe Notes
* No carrots? Substitute butternut squash in this recipe to change it up.
** Make your own broth to ensure Whole30 compliant (or see below for some ideas)
Garnish with herbs (e.g. sage leaves or basil, chopped thyme) and/or pepitas or chopped walnuts. Use your imagination!
Don't have an Instant Pot and want to jump on the bandwagon? Here's the version I am using in my kitchen. It's EASY to use and makes quick work of so many meals.
I love my Immersion Blender. This is the one I use at home. It makes it all so easy. I love my VitaMix but for this soup, and most soups, I use the immersion blender! There are many varieties and most are more expensive than mine. It's simple and works well.
If no time to make your own broth...and it happens!.. Try Imagine brand soup stocks. There are many. I use Imagine brand chicken broth. These are organic, free-range and offer a low sodium option too.
