I have started adding extra greens to meals that don't necessarily 'call for' greens in the recipe. If you have been reading my recipes here for a while, you know that it's not uncommon for me to do 'remakes' of old recipes with addition of a variety of greens or herbs! This Instant Pot Crack Slaw with Herbs is one such creation! I LOVE my Instant Pot and this ingenious kitchen time-saver allowed me to make this scrumptious dish for dinner in less than 20 minutes!! Did I mention that the ground turkey was slightly frozen when I pulled it out of the fridge? (I have a very cold fridge which I should get adjusted!)
Instant Pot Crack Slaw with Herbs is a funny name.
I confess that the number of versions of this recipe, in the last year, is now over 25! It's just that every time I make it, I have other ingredients in mind, to add, and .. well.. It's ALWAYS so good. Addictive, in fact, which no doubt is where it gets its name! I first learned of it from some WW friends who referred to it casually as a "go to" recipe, for a quick and delicious meal!
I have been making it in my Instant Pot, and yet, this is also an easy stovetop dish. Instant Pot Crack Slaw with Herbs can also be just plain ol' 'crack slaw with herbs' on the stovetop! I add different greens depending upon what is on hand and in season. The chopped cabbage or broccoli or cauliflower adds that crunch that is one of the attractions for me in this recipe. The herbs and spices can differ too but the constant is that 'crunchy' slaw that is added at the end to retain nutrients and a nice 'bite'.
Here's the Instant Pot in my kitchen. If you don't have one ~ think about treating yourself. It's THE best kitchen helper ever!
Instant Pot Crack Slaw with Herbs
Ingredients
- 1 pound turkey ground
- 1 Onion organic when possible, diced
- 1 tablespoon Avocado oil
- 2-3 teaspoon Sesame oil toasted
- 2 tablespoon tamari or coconut aminos or your preferred soya sauce
- 2 garlic cloves
- 1-2 tablespoon horseradish fresh preferred when possible
- 1 tablespoon Dijon mustard
- 1-2 tablespoon hot sauce
- 2 teaspoon Chia seeds
- 1 small shredded cabbage or 1 package of shredded cabbage or cole slaw or broccoli slaw
- 3-4 basil leaves chopped (or whatever you have on hand)
- Optional: Italian parsley or Cilantro small bunch of your favourite herb. Try fennel or lemon balm!
Instructions

Select sauté on your Instant Pot and allow pot a moment to heat up

Add the avocado oil and ½ the sesame oil.

Add onions and sauté for a 2-3 minutes, stirring often.

Add 1 garlic clove, sliced finely.

Stir to incorporate into onion mixture and then quickly.

Add the turkey (or whatever your chosen protein), as well as tamari or coconut aminos

Use a wooden spoon or spatula to move the ground meat around the pot to cook.

Add the horseradish, Dijon mustard and hot sauce if using

Cook the meat, stirring in all the ingredients

Continue to sauté for two minutes (or until meat is browned)

Mix in chia seeds, if using.

Turn off pot.

Place cabbage (or whatever coleslaw you are using) on top of the meat mixture.

Add the remaining finely sliced or minced garlic clove and any chosen add ons.

Lock on lid and close pressure valve.

Cook at high pressure for "1" minute (This may sound odd but it's perfect every time!)

When beep sounds, carefully release the pressure.

Open lid and stir the coleslaw into the meat mixture

Add the finely chopped cilantro or parsley or whatever your pleasure.. and mix well
Recipe Notes
For each 1 lb of meat, I tend to use one entire package of coleslaw (14-16 oz) If using a fresh cabbage, it's really up to you. I use a small cabbage or ½ a larger cabbage. The chia seeds? Another tip from a friend. Such a great idea. The chia seeds help to turn the liquid from the mixture into a lovely sauce, in that brief time frame.
The last time I made this yummy concoction, I added cauliflower rice to the mixture:
After the lid came off ~ a handful of finely chopped cilantro is the perfect topping!
This is INSTANT POT Crack Slaw with Herbs is a 'no brainer' recipe in so many ways.
We want to cook a flavourful ground meat mixture, add some nutritive herbs and a crunchy slaw --
that's it. That's all. It's ADDICTIVE. The name makes me laugh!
