Some are into 'sweets' ~ me? Give me salty and savoury! I love the crispy crunch + crackle of
potato chips, if the truth be told. I was thrilled, years ago, to discover alternatives to my beloved
chips....at my local HFS (health food store) ~ chips made from parsnips, beets, sweet potatoes,
and I got excited about learning to make some of my own "crispy crunchy savoury veggies".
I've learned about baked/roasted Brussels Sprouts from my dear friend Bev, who confessed
that she had learned of a recipe which literally transformed this veggie, which many DO NOT
LIKE !!! into a dish that all, and I mean ALL of her young nieces and nephews now clamour for ~
I'll publish that quick recipe next week on MEATLESS MONDAYS!
Having dehydrated everything from parsnips, to carrots, turnips, to beets and more with the
idea of new CRISPY veggies, I have had some success and yet I really like the 'crunch' from
the oven; well, at least until later in the year.

KALE CHIPS
Here's what you do:
Buy Kale from the supermarket. Buy the largest leaves available, if there's a choice.
Pre-heat oven to 350 degrees F.
Wash the leaves well.
Remove the leaves from the stems.
Use paper towels to dry the leaves. I use a 'salad spinner'.
In fact, I remove the leaves from the stems, dropping them
one by one into the salad spinner.
Place dried leaves into a bowl.
Drizzle the olive oil over the leaves.
Gently toss the leaves, making sure all are well coated.
Add salt and/or desired seasoning
Arrange on baking sheet (s) so that leaves are as 'separate' as possible.
Bake for 15 minutes or until crisp.
Ingredients:
1 bunch of Kale
1-3 teaspoon olive oil
Sea salt (or your fave salt) to taste
Optional additions;
roasted garlic, basil, oregano, cayenne, cumin, hot pepper flakes, dill or
various kinds of vinegar or a quick sprinkle of lemon zest.
What's your favourite??
This is Kale, hot pepper flakes, "Italian seasoning herb blend" and a
sprinkle of lemon zest. Delish!
