Are you a fan of Horseradish? Do you have access to the fresh root? This gnarly 'parsnip on steroids' is a definite part of my world, especially in the colder months! I'd like to think that the days are getting longer and brighter.. and we will actually SEE that soon, where I live in Toronto! This 'fresh horseradish dressing' is a longtime favourite. I hope you'll try it and enjoy it as much as we do! It's versatile and adds a zing to all sorts of meals!! This is more of a template really-- so use as a general guideline and substitute herbs you have on hand to make it easy and change it up!! No fresh horseradish? In a pinch I have used the jarred horseradish on occasion. (I do have access to fresh root, so that's rare!) It's easy to grow so that's another option!

Fresh Horseradish Dressing
Add some zing to your next salad ~ greens or tuna, salmon or chopped egg OR enjoy as a delightful herby dip! Add a kick to your next 'crudite' platter!!
Ingredients
- 2 cups plain yogurt non-fat or full fat..or non-dairy --your choice
- 4 tablespoons dill freshly chopped
- 1 tablespoon garlic scapes finely chopped^
- 1 tablespoon horseradish freshly grated
- 1 teaspoon apple cider vinegar or your favourite!*
- Black pepper freshly ground
- Sea Salt
Instructions

Combine all ingredients together in a glass jar.

Refrigerate.

Shake well and use on salad greens

Enjoy within 2 weeks.
Recipe Notes
^ I freeze some every spring so normally have a container on hand but do substitute finely chopped small scallion or minced chives if scapes not in season or in your freezer! *Why not make an herb-infused vinegar and use that? Check out this post for more info.
This creamy concoction is versatile! I love using dill which is another super supportive herb (Dill medicine post here) but feel free to substitute with whatever you have in your kitchen. I have made this dressing with basil, cilantro, Italian parsley (to name a few!)
I do use a tablespoon or two of fresh horseradish root in the classic 'oil + vinegar' vinaigrette sometimes too. The pungent kick really does add a zing to your meals! Want some more ideas? Tasty recipe, I would love to grow horseradish in my garden! Any suggestions for getting roots or plants?

You can make a new planting from horseradish roots purchased from a nursery, or simply use healthy roots from the produce market. Planted in fall or late winter, horseradish roots sprout leaves in spring. Plants need at least one season, and preferably two, before they are ready to dig. Do you have access to a grocery store that sells fresh root? If so.. that's the easiest.
Want to grow from seeds? West Coast Seeds sells seeds, but I'm sure there are other sources online as well.
