Don't you just love summer? Sometimes, I get lost in my garden or just hanging out on the porch with a book and lose track of time. Hot weather can make us relax into a hazy degree of lethargy (in a good way!) WOW! I'm not complaining, but a stretch of high temps has changed some of the ways that I entertain! Enter.. stage left.. wonderful EASY summertime COLD soups!
Today, it's Chilled Avocado soup! Cold n' creamy. Yum.
Get out your blender -- it's that easy!!
When the days are just TOO hot to be in the kitchen for long, I've started experimenting with easy to prepare cooling soups that are both refreshing and light. I wanted to find a way to serve a light n' airy appetizer or lunch with minimal ingredients and preparation time while not spending time heating up my home.
Here's an easy cold soup we have made a number of ways ~ Chilled Avocado soup is a classic.
Chilled AVOCADO SOUP with cucumber
COLD + CREAMY
Ingredients
- 1 ripe Avocado peeled, pitted, chopped
- 1 English cucumber peeled, seeded, chopped
- 1-2 green onions sliced
- 1 cup plain yogurt full fat, fermented, best quality
- 1 cup cold water
- 2 tablespoon lime juice fresh
- Sea Salt
- Pepper freshly ground
- Garnish with chopped cilantro leaves or 'snips' of chives.
Instructions

Combine all ingredients (except salt, pepper and garnish) in a food processor or blender. Whiz it all together.

Add seasonings ENJOY!!
Recipe Notes
I've made this with sour cream as well and it's very yummy.
For Paleo peeps: Use full fat yogurt, fermented without any sugar.
