Spending some time lakeside and enjoying a little break from my regular appointments and packed days. Hope this finds you also having a slightly (or totally) different rhythm for a while. I absolutely love cooking up fruity treats with the summer's bounty and came across this one recently --which of course I have adapted to become a healthier version. I hope you'll try this "Cherry Lime Fig Chutney" !
It was an instant hit this week, when I served it alongside our BBQ turkey burgers for a little something different. Got cherries? Do try this one. The flavours are deep, darkly fruity and SO good. No leftovers!
Cherry Lime Fig Chutney
Deeply Dark fruity flavours
Ingredients
- 1.5 cups fresh or frozen cherries pitted
- 2 tablespoon figs, finely chopped (or 2 tablespoon fig jam)
- 2 tablespoon red wine vinegar
- 1 tablespoon lime juice
- zest of 1 lime finely grated
- ½ teaspoon ground ginger
- ½ teaspoon ground cardamom or nutmeg or allspice
- 2 tablespoon water if needed
- 1 tablespoon coconut sugar OPTIONAL..or 1 drop Stevia
Instructions

In a small saucepan, add cherries, figs (or jam), vinegar, lime juice + zest, spices + 1 tablespoon water.

Cover + simmer on low heat for about 20 minutes, until cherries have softened

Remove lid, and continue to simmer until the mixture has thickened to honey consistency.

I made this with fresh cherries but the thickening process could take longer if made with frozen cherries.

When thickened, ladle into a glass bowl and refrigerate for at least 30 minutes.

Serve at room temperature.

Makes 310 ml or about 1.5 cups of yummy chutney!
