It's hot outside + I've finally written down a recipe we've made in my family for years! I took pictures too!! This cauliflower salad is a snap to make + tasty too !
This recipe uses a generous amount of sweet curry powder which IS delish if that's a good flavour for you. If not, there are dozens of other options possible!
Cauliflower is such a versatile veggie! I often include this special brassica in my meals, in one form or another! What do you like to make with Cauliflower?

Summery + Aromatic Cauliflower Salad
Ingredients
- 1 small head of cauliflower
- 12 Cherry tomatoes halved
- ½ C peas fresh or frozen
- ¼ C bacon cooked + chopped, about 3 slices
- Plain Yogurt Greek or Krema or your choice
- 1-2 teaspoon curry powder divided
- Sea salt + black pepper to taste
Instructions

Chop the cauliflower into flowerettes

Put in a steamer pot to steam

In the meantime, chop up the cherry tomatoes and add to a large bowl.

Add the peas and the chopped cooked bacon.

Add 1 teaspoon of curry powder

Add salt and pepper to taste

Remove the cauliflower from the heat and drain.

Add the cauliflower to the bowl and allow to sit for five minutes before mixing.

Combine the mixture

Allow the mixture to cool a bit

Add the rest of the curry powder

Add the yogurt + stir well
-
Refrigerate for 4 hours or overnight

OR enjoy right away.

Optional garnishes:

Sliced almonds, slivered basil, sunflower seeds, chopped fresh herbs such as cilantro, Italian parsley, dill etc
Recipe Notes
f you choose to use frozen peas, they will thaw quickly when you add the hot steamed cauliflower and allow to sit 5 minutes. We can change this up in so many ways. This is how i made the recipe yesterday. I did top with a sprinkling of fresh Italian parsley + slivers of basil, just prior to serving.
