I have the good fortune to have access to my friend's farm (read: sunny garden) and it is there that I am overjoyed to experience growing tomatoes, peppers, including some spicy ones, onions, leeks, other veggies, and of course.. some of my treasured herbs! This is the time when we turn to the optimum enjoyment of the late summer bounty -- this is a favourite recipe + one that I finally took a picture of-- just for you! I've made it for years, and it always disappears too fast to be honest. Baked Feta with herbs -- it's extremely easy to throw together.. Essentially some tomatoes, with a block of Feta cheese + olives and/or other herbs
BAKED FETA WITH HERBS
This dish is a favourite in my home. I make it all year.. When cherry tomatoes are in season, and abundance, it's a wonderful savoury way to enjoy +
can be changed up with various add-ons. See below for some ideas! It's pretty too, isn't it? ENJOY it !!!
BAKED FETA WITH HERBS
Ingredients
- 1 block feta cheese
- ½-1 C cup pitted olives
- 2-3 cloves garlic sliced
- 1-2 C cherry tomatoes
- ⅛- ¼ cup extra virgin olive oil
- 1 teaspoon dried oregano dried
- ¼ teaspoon thyme dried (or 3-4 sprigs, separated.Chop some + leave sprigs for putting on the feta)
- ½ teaspoon dried herbs-- your choice: rosemary marjoram, basil etc.
- Freshly ground black pepper
- Optional
- ½ C sundried tomatoes
- ½ C artichoke hearts chopped
- additional chopped herbs
Instructions

Preheat oven to 375 degrees

Place a block of feta in the middle of a baking dish

Add the tomatoes, olives + garlic to surround the feta

Put the olive oil in a cup + add the herbs + any additional add-ons.

Pour this mixture over the feta + tomato mixture in the baking dish.

Bake at 375 degrees for 20-30 minutes (time will depend on size of your concoction!)

or until cheese 'melty' and tomatoes are a little 'blistered'

Do you have a lot of tomatoes at home? Maybe you've been to the farmers' market + bought a bushel or 2? I'm teasing .. maybe. If you're reading this in the middle of winter, you may not be looking for recipes for TOMATO JAM -- but if you have lots of tomatoes. Here's my recipe for tomato jam -- another winner for sure!
