It's time.. FINALLY.. Depending upon your location, you have more or less.. happy green weeds and assorted early herbs showing up to make us happy!
In southern Ontario where I am, we're just getting over a winter storm (hoping that is the last) There was snow, and lots of it, just north of here but we just
had a few dreary cold days with flurries! This morning? I saw dandelions blooming + found some violet leaves in my garden too. Chickweed should be appearing any moment!
I hope you'll try this healthy wild weeds pesto !! It's more of a template, really... just use what you have on hand + if needed, add some baby spinach or basil to top up the
greens!
Health pesto is so easy to make! It comes together in 5 minutes after the ingredients are assembled! We can vary the greens, change up the nuts/seeds, and
substitute Romano or other grated cheese for the classic Parm. If you want to make lots and freeze extra for later, I tend to leave out the cheese + add it back later.
I love to make extra + free ½ of the recipe in ice cube trays -- perfect sized portions to add to soups, stews, pasta sauces etc.
How to make Wild Weeds Pesto:
It's actually such an easy combination of delicious flavours! Try to include dandy greens at this time of year, just to pump up your 'bitters' quotient.
Enjoying bitters or the bitter taste during our Spring is especially important to support healthy digestion after the cold months!
WILD WEEDS PESTO
Ingredients
- 1 clove garlic
- Pinch coarse salt
- 1 cup fresh chickweed
- ½ cup fresh chives dandelion, violets, (or your choice) chopped
- ¼ cup walnuts or almonds, pine nuts, sunflower seeds.. your choice
- ¼ cup freshly grated Parmesan
- ¼ cup good quality olive oil
Instructions

In a mortar and pestle, mash garlic with the salt.

Add to a food processor and pulse with all remaining ingredients. EASY!
