Nothing says summer like COLD SOUPS!!!
Wanting to share a few of my favourites ~ and hope you love these! COLD SOUPS are so easy to make and perfect when it's just TOO hot to heat up your kitchen. Both light and nutritious ~ they can become a favourite in your family !

So. First up? This is just delicious!
Gazpacho (from my friend Greg!)
Gorgeous Gazpacho
Ingredients
Blend
- ½ small red onion
- 1 red pepper
- 1 peeled cucumber
- 6 ripe tomatoes
Season
- 4-6 crushed garlic cloves
- 4-6 drops of Tabasco sauce
- 4 tablespoon of vinegar wine or balsamic
- 4-6 minced fresh basil leaves
- 2-3 tablespoon fresh lemon juice optional
- 2-4 cups of tomato juice
Instructions

Blend first set of ingredients in blender or food processor until smooth.

Add seasoning.

Add tomato juice to desired viscosity.

Refrigerate 24 to 36 hours before serving

Garnish with fresh Basil

Two KEYS to SUCCESS?
Use balsamic vinegar and make the soup at least 24 hours in advance.
Here's a favourite fruity COLD SOUP ~another creation a la my dear delightful friend, Greg, who always brings a wonderful 'addition' to our collective meals! It's fruity and light and ridiculously easy!
Orange Cantaloupe Soup
Orange Cantaloupe Chilled Soup
Ingredients
- 1 cantaloupe
- ½ can frozen orange juice
- 1 cup good quality water or a little more to achieve consistency wanted
- I cup white wine
Instructions
-
Scoop the contents of one cantaloupe and process until smooth

Add frozen orange juice and process
-
Add one cup of water ( or more) until you get the consistency you desire.

Refrigerate minimum 8 hours.
and then.. Just before
-
30 minutes before serving add one cup of white wine.

This will be better if made the day before serving
Classic Vichyssoisse
This is perhaps, my favourite. It needs to be made the day before so that the flavours can meld together for the best result. This recipe was shared with me ages ago. I don't know the original source, but it seems to be a fairly 'traditional' ingredient list. Vichyssoise is typically a soup made with potatoes, leeks, and cream, served chilled. This is a lighter version. I use broth instead of cream and hope you'll enjoy it this way. Sometimes, I double this recipe. Cold Soups can be an entertaining life-saver!
Elegant Vichyssoise
Ingredients
- 3-4 good sized Leeks white parts only
- 3-4 large potatoes
- 5 cups organic vegetable broth or your own homemade stock!
- 2 - 3 tablespoon grass fed butter
- Sea Salt
- Freshly ground pepper
Instructions

Clean the leeks and slice the white parts.

Wash and peel the potatoes into a large dice.

Note: You don't need to be finicky with this. Just cut up the leeks and potatoes.

Add the butter to a large pot and melt.
-
Add the leeks to the butter and saute for 5-10 minutes, until soft.

Add the potatoes and the broth.
-
Bring to a quick boil and then simmer for 15 minutes with lid on (or until potatoes are cooked)

I use a hand mixer like this one from Braun, to make this super easy.

Blend the soup until smooth. Add sea salt and pepper to your taste.

Allow to cool to room temperature.

Pour into a large bowl and refrigerate.
Recipe Notes
When ready to serve, pour into bowls or stemmed glasses.
Top with a little sour cream. Garnish with a snip or two of fresh chives.
OR drizzle the best quality olive oil you can find over the top and add flat leaf parsley or your favourite herb.
Creamy Avocado + Cucumber Soup
The ultimate "cooling soup" for all of us who are spending too much time online or in the heat! Limitless garnishes or something simple.
Refreshing Avocado and Cucumber Soup
Ingredients
- 1 ripe Avocado peeled, pitted, chopped
- 1 English cucumber peeled, seeded, chopped
- 1-2 green onions scallions
- 1 cup plain yogurt
- 1 cup cold water
- 2 tablespoon lime juice fresh
- Sea Salt
- Pepper
- Garnish with chopped cilantro leaves or 'snips' of chives.
Instructions

Combine all ingredients (except salt, pepper and garnish) in a food processor or blender.

Whiz it all together.

Add seasonings ENJOY!!
There are more but these are my 4 favourites. Secret is in the planning as they ALL taste better when they have been made the day before, when possible, or at least 8 hours in advance.
